- 3 Tbsp. scallion (uncooked, minced, 1 medium)
- 1 tsp. lemon zest
- 1 tsp. ground coriander
- 1/2 tsp. kosher salt
- 1/4 tsp. black pepper (freshly ground)
- 1 egg white (I used 2 egg whites because the burgers wasn't binding well)
- 1/2 cup cucumber (diced)
- 1/4 cup sweet red pepper (diced)
- 2 Tbsp. red onion (uncooked, thinly slivered)
- 1/4 cup grape tomatoes (or cherry tomatoes, quartered)
- 2 Tbsp. parsley (fresh, chopped)
- 3 Tbsp. fresh lemon juice
- 1 Tbsp. olive oil (extra-virgin)
- 1/4 tsp. table salt
- 1/4 tsp. pepper
