- 1 russet potatoes (peeled and diced)
- 1/2 white onion (or large yellow, diced)
- 1 bell pepper (seeds and pith removed, diced)

- 1 tsp. olive oil
- 1/2 tsp. paprika
- 1/4 tsp. ground black pepper
- 1/4 tsp. garlic powder (or 1 clove of minced fresh garlic)
- 1/4 tsp. dried oregano
- 24 oz. tomato purée
- 1 chipotle peppers (in adobo sauce, finely chopped)
- 3 Tbsp. adobo sauce (plus more to taste)
- 2 tsp. agave nectar (or sweetener of choice)
- 1/4 tsp. liquid smoke (optional)
- 10 corn tortillas (or as needed)

I made my own tomato puree using 1 HUGE fresh tomato, along with a can of "chili starter" stewed tomatoes, 1 Tbsp of sugar, 1 Tbsp of apple cider vinegar, 6 basil leaves, 2 garlic cloves & 1/2 a tsp of salt. Then, I made the enchilada sauce - REALLY good! We topped it with vegan provolone cheese and our own limey guacamole, then added vegan sour cream. If you wanted to add extra zing, I added Tapatio. (If you want to move away from vegan, goat cheese is also an amazing addition.) I also subbed a sweet potato instead of a regular potato (yum) and added chia and flax seeds for some textured crunch. AWESOME!
