- 2 onions (thinly sliced)
- 3 garlic cloves (thinly sliced)
- 1 Tbsp. chili powder
- 1 tsp. cumin
- 1 cup lentils
- 1 can chickpeas (drained & rinsed)
- 2 cups water
- 1/2 tsp. salt
- 1 tsp. hot sauce
- 1 head iceberg lettuce
- salsa
- lime wedges
- fresh cilantro

Directions
- heat oil, add onions, garlic, chili powder & cumin - sauté until veggies soften approx 3-4 mins
- stir in lentils & chickpeas
- add water & salt, bring mixture to slow steady simmer & cover until lentils tender, approx 35 mins
- add hot sauce
- fit a leaf of lettuce into hard taco shell to hold fillings in, add spoon of lentil filling, add salsa & lime & cilantro
