- 2 cloves garlic (minced)
- 14 oz. coconut milk (1 can)
- 2 cans chickpeas (15.5 oz each, rinsed and drained)
- 2 cups baby spinach
- 1 can crushed tomatoes (I prefer Muir Glen Organic Fire Roasted or use 3 medium red tomatoes chopped)
- 1/2 cup water (add more if needed)
- 1 tsp. cumin seeds
- 1 Tbsp. garam masala powder
- 1/2 tsp. red pepper (powder, adjust per spice tolerance)
- 1/2 tsp. turmeric powder
- 1 Tbsp. fresh lime juice (or lemon)
- 1/2 tsp. salt (adjust per taste)
