  • 1/2 pound medium potatoes
  • 1 teaspoon olive oil
  • 4 1/2 ounces chicken breast
  • 7 ounces zucchini (sliced)
  • grated nutmeg (Pinch freshly)
  • 1/2 cup basil leaves
  • 1 3/4 ounces gouda cheese (grated)
  • black pepper (or Freshly ground pink)

    Directions

    1. Preheat the oven to 350°F. Cook the potatoes in boiling salted water until tender. Heat the oil in a frying pan and fry the chicken for 4-5 minutes until cooked through. Transfer to a plate and slice thinly.
    2. Add the zucchini slices to the pan and sauté for 3-4 minutes, until they start to turn golden. Slice the potatoes and arrange in a small, shallow baking dish with the zucchini and chicken.
    3. Sprinkle with the nutmeg and basil leaves, then the cheese and a sprinkling of pink or black pepper. Bake for 15-20 minutes until the cheese is melting and lightly browned.
