  • 1 package knorr rice sides - chicken
  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breast halves
  • 1 zucchini (large, cut into 1-inch pieces)
  • 1 red bell pepper (medium, cut into 1-inch pieces)
  • 1 teaspoon loosely packed fresh basil leaves
  • 2/3 cup shredded mozzarella cheese (about 2 oz)

    1. Preheat oven to 375°.
    2. Heat 1 Tbsp. oil in 12-inch nonstick skillet over medium-high heat and brown chicken, stirring occasionally, until chicken is thoroughly cooked, about 7 minutes. Remove chicken from skillet.
    3. Heat remaining oil in same skillet and cook zucchini, red pepper and basil over medium heat, stirring occasionally, until vegetables are crisp-tender, about 8 minutes. Layer 1/2 of the Knorr® Rice Sides™ - Chicken, chicken, vegetables and cheese in 1-1/2-quart casserole; repeat.
    4. Bake uncovered until cheese is melted, about 5 minutes.
    5. Season chicken, if desired, with salt and black pepper.
