- 1 lb. skinless chicken breast (boneless, cut into bite-sized pieces)
- 1/2 tsp. salt (divided)
- 1/4 tsp. pepper (divided)
- 1 Tbsp. flour (I used white whole wheat)
- 1 Tbsp. tomato paste
- 1/2 cup low sodium chicken stock
- 1 small onion (finely chopped)
- 2 cloves garlic (finely chopped)
- 8 oz. cremini mushrooms (sliced)
- 1 Tbsp. sweet paprika
- 1/4 cup sherry wine (optional)
- 1/4 cup reduced fat sour cream (or Greek yogurt)
- 8 oz. egg noodles (enriched, cooked and drained)
- 1/4 cup chopped parsley

I doubled up on the sauce ingredients (because we're saucy people) and I omitted the wine and mushrooms. I added diced red bell pepper and an extra clove of garlic to the sauteed onions and let the veggies and chicken simmer in the sauce with a bay leaf. I used yogurt and added between a half to one whole tbsp of cream cheese to the sauce to add some richness to it. It turned out pretty tasty.
