  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons white, white wine, red vinegar
  • 2 tablespoons sugar
  • 2 teaspoons ground ginger
  • 2 cloves garlic (finely chopped)
  • 2 pounds boneless, skinless chicken breast halves

    Directions

    1. For marinade, blend all ingredients except chicken and Peanut Sauce.
    2. Pour marinade over chicken in large, shallow nonaluminum baking dish or plastic bag; turn to coat. Cover, or close bag, and marinate in refrigerator, turning occasionally, 3 hours.
    3. Remove chicken from marinade, discarding marinade. Thread chicken on skewers. Grill or broil chicken, turning occasionally, 6 minutes or until chicken is thoroughly cooked.
