- 10 oz. wide egg noodles (fresh, or linguine/fettucini noodles - we use linguine noodles)
- 1 lb. boneless chicken thighs (trim off the fat and save it to render the fat)
- 3 bunches greens (Chinese, yu choy or bok choy)
- 2 Tbsp. chicken fat (see below)
- 3 cloves (garlics, peeled and minced)
- 1 inch fresh ginger (knob of, peeled and thinly sliced)
- 6 shiitake mushrooms (large)
- 1/2 cup button mushrooms (sliced)
- 1 cup chicken stock
- salt (to taste)
- 2 Tbsp. soy sauce
- 1 Tbsp. Shao xing wine
- 1 dash white pepper
- 1 Tbsp. sesame oil
- 2 stalks spring onion (finely chopped)
- fried shallots
- pork cubes (Crispy, see below)
