- 6 oz. green beans (tops and tails broken off and cut into 2-inch pieces, you need about 2 cups)

- 4 lb. Yukon Gold potatoes
- 2 leaves (freshhoja santa, torn into 1-inch pieces OR 1/2 cup, or more roughly chopped cilantro)
