- 2 tsp. chicken (grilling blend, See Note 1)
- 1/4 tsp. ground cumin (EACH:, and freshly cracked pepper)
- 2 pkg. wild rice (6 oz; 170g EACH Long Grain and, packaged mix, See Note 2)
- 2 lb. sweet potatoes (small, 7-8 oz. each)
- 1 handful spinach (optional)
- 1 large avocado (optional)
- 1/2 cup freshly squeezed lime juice (EACH:, 106g and olive oil, 98g)
- 1/2 tsp. lime zest
- 1/2 cup cilantro (gently packed, about 1 bunch; some stems are fine, I just twist off the tops typically)
- 1 Tbsp. jalapeño (EACH: coarsely chopped, honey, almond butter)
- 1 tsp. ground cumin
- 1/2 tsp. Dijon mustard
- 1 clove garlic clove (coarsely chopped)
