- 2 jalapeños (chopped, I used jarred)

this was really good hpwever when i waa making it i wasnt sure if the beans n chilis should be drained or npt since i always drain the beans i did for this but i think maybe i shouldn't have tge flavor was good but the filling was dry not in a bad way i think when i do this again i would reseve some of the liquid i really liked thos dish

The recipe is very labor intensive. I made a few minor changes to make it more kid friendly and it turned out well. Instead of cooking the chicken on the stove I put it in the crockpot before work in the morning then when I got home all I had to do was make the sauce and assemble the enchiladas. Makes it much easier!
