  • 3 cups reduced sodium chicken stock
  • 1 carrot (peeled, julienned in 2 inch strips)
  • 1 1/3 pounds chicken breasts (cut into large chunks)
  • 7 ounces vermicelli noodles (dried)
  • 14 ounces sweet corn (rinsed and drained)
  • 2 teaspoons soy sauce
  • 1 tablespoon chives (snipped)

    Directions

    1. Pour the stock and 4 cups of water into a large saucepan and bring to a boil over high heat. Add the carrot, chicken, noodles, sweet corn and soy sauce.
    2. Return the soup to a boil, then reduce the heat to medium and cook for 5 mins, until the chicken is cooked through and the noodles are tender.
    3. Ladle the soup into serving bowls. Sprinkle with chives and serve.
