I’ve been making this dish for some time now with a few modifications. My kids are not fans of spinach so I use fresh basil as a substitute. I also use fresh cut up (1/2 inch cubes) of chicken cooked in oil with Italian seasoning and add a tsp of garlic powder on the chicken as it cooks. These changes give the pasta tubes more volume and flavor. After cooking chicken and placing it aside, I use the same pot to cook the manicotti pasta. Cuts down on dishes and gives it a nice chicken stock to cook it in. Give it a try!

This was absolutely amazing! Definitely tastes like a dish at an Italian restaurant. I didn't use more alfredo sauce to cover the top of the shells because it was enough sauce already. Turned out unbelievably perfect!
