- 1 1/2 lb. skinless boneless chicken breasts (cut into bite size pieces)
- 1 lb. shrimp (peeled medium sized, cleaned and patted dry)
- 1/2 cup soy sauce
- 1 Tbsp. brown sugar (or grated piloncillo)
- 2 Tbsp. unseasoned rice vinegar
- 3 Tbsp. sauce (from chipotles in adobo sauce more to taste)
- 4 garlic cloves (peeled and pressed or finely chopped)
- 2 Tbsp. fresh ginger (grated)
- 1 serrano chile (stemmed and finely chopped)
- 9 Tbsp. safflower oil (Oléico, divided)
- 3 eggs (lightly beaten)
- 1 cup carrots (diced, from about 2 medium sized carrots)
- 1 1/2 cups fresh asparagus (diced, bottoms of stalks peeled and dry base cut off)
- 1 cup peas (shelled)
- 10 scallions (root ends removed, white, light green and green parts sliced, reserving a tablespoon or so for garnish, optional)
- 4 1/2 cups cooked rice (cooked long grain, cooked from 1½ cups raw rice)
- kosher salt (to taste)
- freshly ground black pepper (to taste)
