- 2 Tbsp. ghee (or olive oil)
- 1 yellow onion (medium, diced)
- 3 stalks celery (cut into 1/4-inch slices)
- 2 Tbsp. all purpose flour (For gluten-free, you can use Bob's Red Mill AP gluten-free flour)
- 4 cups low sodium chicken stock
- 2 cups water
- 2 lb. yukon gold potatoes (cut into 3/4-inch pieces, about 6 small/med. potatoes)
- 2 large carrots (cut into 1/2-inches slices)
- 1 tsp. dried thyme
- 1 bay leaf
- 1 tsp. fine sea salt (or salt to taste)
- black pepper (to taste)
- 2 Tbsp. fresh parsley

it was really good I used 6 cups of chicken broth and no water instead of 4 cups of broth and 2 cups of water.

Delicious. I did not have celery on hand so I used celery salt in addition to some sea salt. I also pulled aside 4 cups of the vegetable soup (prior to adding the chicken) and blended it in my Cuisinart. It was a great way to thicken the soup without adding flour. This is an easy, quick, meal to have on hand when the “FEED ME” moment demands attention from every cell in your body!
