  • 8 chicken thighs (skin on)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 1 tablespoon olive oil
  • 8 ounces cremini mushrooms
  • 1 tablespoon flour
  • 1 cup chicken broth
  • 1/2 cup dry white wine
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh parsley

    Directions

    1. Preheat oven to 400. Season chicken with salt, pepper and 1 Tbsp of rosemary and thyme (each). In large cast-iron skillet, heat olive oil over medium heat. Add chicken, skin sides down. Cook 5-7 minutes until browned on one side. Turn over and place skillet in oven. Bake 15-20 mins or until done.
    2. Remove chicken from skillet, set aside and keep warm. In same skillet, cook mushrooms, stirring, over med-high heat for 4 minutes. Stir in flour to skillet. Stir in broth, wine, and mustard. Cook and stir until thickened and bubbly. Cook at least 1 minute more. Remove from heat. Add the remaining rosemary, thyme, and parsley.
    3. Serve mushrooms and sauce over chicken
