  • 1 chicken breast (grilled, cut in half, boneless, skinned)
  • 2 tablespoons mayonnaise (light)
  • 1/2 teaspoon curry (ground)
  • 1 stalk celery (chopped)
  • 1 spring onion (finely chopped)
  • 10 grapes (seedless, cut in half)
  • bread slices (as desired)
  • salt (as desired)
  • pepper (as desired)

    Directions

    1. Mix the mayonnaise, curry, salt, and pepper in a salad bowl.
    2. Cut the chicken breast into cubes, add it to the salad bowl, and mix (you can add a dash of milk if the mix is too thick).
    3. Add the celery, spring onion, and grapes to the salad bowl and mix them carefully. Let it sit for 1 hour.
    4. Toast the bread slices and serve the salad on top of them. You can also add some chopped lettuce on top.
