- 1 medium onion (diced)
- 1 clove garlic (minced)
- 10 oz. rotel (diced tomatoes and green chilies, undrained)
- 10 oz. enchilada sauce
- 15 oz. black beans (rinsed and drained)
- 1/2 tsp. cumin
- 1/2 tsp. garlic powder
- 1 cup shredded cheddar cheese (divided)
