Description
There is not much that is more warming on a cold winter's day that a bowl of chicken soup, so we have come up with a tasty, quick & very easy recipe that will have everyone warm & satisfied.
Ingredients

2 SERVINGS
- 1 tsp. vegetable oil
- 1/2 leek (Medium)
- 250 grams pumpkin
- 1 carrot (Medium)
- 1 cup chinese cabbage
- 5 grams flat leaf parsley
- 200 grams chicken breast (Raw, Lean)
- 2 cups chicken stock (Liquid, 500g)
- 1/4 cup quinoa (Raw, 50g)

Directions
- Half the leek lengthways and thinly slice. Peel and deseed the pumpkin and coarsely grate. Coarsely grate the carrot. Shred the Chinese cabbage
- Heat the oil in a medium saucepan over medium heat. Add the leek and pumpkin to the pan. Cook, stirring often, for 3 minutes.
- Add the stock and 500ml water to the pan. Cover and bring to a simmer. Add the chicken and cook, partially covered, for 7-8 minutes or until the chicken is just cooked. Transfer to a plate and set aside to rest.
