- 2 chicken breasts (medium, thinly sliced)
- 3 scallions (/spring onions, white and pale green parts chopped and the green tops reserved for garnish, optional)
- 1 potato (large white, peeled and diced into small cubes, about 8-9 oz/250-300 g)
- 1 knob ginger (grated, about 1-2 tablespoons of grated ginger)
- 4 fresh corn (cobs of, or 3 cups of frozen corn kernels)
- 4 cups chicken stock
- 1 Tbsp. fish sauce
- 2 Tbsp. tamari sauce (or light soy sauce)
- 2 cloves garlic (diced)
- 1/3 tsp. white pepper (black is also fine but white is more Chinese)
- 1 tsp. salt
- 1 Tbsp. arrowroot powder (or corn starch)
- 4 handfuls baby spinach leaves
- 2 eggs
- 1/2 lime
- 1 handful fresh cilantro (/coriander leaves)
