Description
I love this dish because it's great for two or twenty two. It all gets roasted and yummy in one pan. Here chicken thighs were used with fresh chicken sausage, yukon gold potatoes, red pepper, thyme & shallots. You can change up the ingredients by using chicken breasts or pork sausage or adding mushrooms or quartering an onion. Complete the meal by making a salad and serving with a warm baguette.

- 4 chicken sausages
- 4 chicken thighs
- 8 yukon gold potatoes (Mini, Cut in Half or Quarters)
- 1 red bell pepper (or Your Favorite Color)
- 4 shallots
- salt
- paprika (Sweet)
- olive oil
- thyme sprigs (Fresh)

Directions
- Preheat oven to 375 or 400. 400 cooks faster but if you are using the oven for an additional dish 375 may work better for you. Getting the sausages ready: Fill a medium saucepan with water and boil. When it boils drop in the sausages and boil for 3-4 minutes - this removes some of the fat and gives the casing a great crispness.
- Cut potatoes in half or quarter. Cut pepper in eight pieces. Peel & cut shallots in half.
- Put all ingredients in a baking/roasting pan. Sprinkle liberally with salt and pepper. Sprinkle (sweet) paprika on all. Drizzle with olive oil. Add sprigs of thyme.
- Check at 20 minutes. Great served family style so each person can take what they want.
