- 4 celery
- 4 carrots (large, thinly sliced)
- 1 sweet onion (medium, finely chopped)
- 1 lb. boneless skinless chicken breast halves
- 14.5 oz. diced tomatoes (no salt added)
- 6 cups fat free reduced sodium chicken broth
- 1 bay leaf
- 1 cup instant rice

Directions
- In 6-quart saucepot, melt Promise® Buttery Spread and cook celery, carrots and onion, stirring occasionally, 8 minutes or until almost tender.Stir in chicken and cook 6 minutes or until almost done. Stir in tomatoes, broth and bay leaf. Bring to a boil. Stir in rice. Simmer 10 minutes or until rice is cooked. Serve, if desired, sprinkled with fresh chopped parsley.
