Delicious! Used rotisserie chicken to make it quick and easy! Definitely keep the udon on the side and add per serving so leftovers don’t get mushy! I ate this 3 days in a row doing it that way and it was more amazing the second day when the broth and veggies had time to get all cozy with each other!

Deeeeeelicious!!! I substituted pinot for the dry white wine. The husband and I loved it. This will be a house staple going forward! Really yummy and pretty simple directions.
