  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 1 jalapeño (diced and seeded)
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 14.5 oz. crushed tomatoes
  • 1 can diced tomatoes (with chilis such as rotel)
  • 3 cups chicken broth
  • 14.5 oz. black beans (rinsed & drained)
  • 1 cup corn (drained if canned)
  • 2 chicken breasts boneless (skinless)
  • 1/4 cup cilantro (chopped)
  • 1 lime juiced
  • 1 avocado (sliced)
  • 6 corn tortillas (6- inch, cut into 1/4-inch strips)
  • 1/4 cup olive oil
  • salt

    Excellent! Used only one can of tomatoes and doubled the amount of chili powder. Added a fourth c. of plain yogurt at the end.

    I’ll be the first to admit that I am a lazy cook so when I say this recipe was EASY I mean it!! In fact, this healthy, delicious, filling Chicken Tortilla Soup was easier than I had even anticipated! Never, have had such juicy, flavorful chicken- and all I had to do was plop the chicken breast into a pot! And making the homemade tortilla chips (something I was sure I would mess up somehow) was a breeze! In fact, they were so easy and delicious I had to fry up a couple more tortillas because I “taste tested” a few too many. Oops! I think it’s safe to say this will be one of my new go-to dinners for years to come!

    Very very tasty and easy. I had to do some substitutions, I did half a poblano pepper instead of a jalapeño and I only had two cans of diced tomatoes with chilies for the tomatoes. I did just one can of chicken broth and added some bullion. Added avocado, lime, tortilla chips, cheddar cheese and sour cream at the end.

    Delicious! Would recommend adding a second can of diced tomatoes & dicing up avocado! Was so tasty.
