- 2 qt. low sodium chicken (best quality such as Swanson)

- 1/4 tsp. cayenne pepper
- tortilla chips (Crushed)
- 1 handful chopped fresh cilantro
- 2 skinless chicken breasts (cooked, cut into bite sized pieces, see note)

Super easy and super good!! I used a red bell pepper instead of green, only because I didn’t have a green, and the broken pieces of Late July sea salt tortilla chips in place of the corn tortillas. I had to use up a rotisserie chicken and this recipe was the ticket! I’ll definitely make this soup again!

This soup was easy and delicious, but make sure you use a quality chili powder. I used a Dollar Tree chili powder and it was very obvious (stale smoked paprika undertones). Lesson learned!

I loved this tortilla soup! It does take a while to make cause you have to put it in a blender (probably would have been way faster if I had a real blender and not just one of those ninja bullets) but it is definitely worth it!
