- 100 grams hokkien noodles
- 1 Tbsp. peanut oil
- 100 grams chicken breast fillet
- 1 green onion (sliced finely)
- 1/4 red capsicum (deseeded, sliced)
- 1/4 stick celery (thinly sliced)
- 1/4 zucchini (sliced)
- 1 1/2 Tbsp. teriyaki marinade
- 1 tsp. soy sauce
- 1 Tbsp. roasted peanuts (chopped)

Directions
- Place noodles into a large heatproof bowl and cover with boiling water. Stand for 3 minutes and set aside.
- Heat wok over a high heat and add half of the oil. Add the chicken and stir fry for 2 minutes or until chicken is cooked through. Remove chicken and set aside.
- Add remaining oil and swirl to coat wok. Add the vegetables and stir-fry for 1 minute.
- Add the chicken, noodles, soy sauce, marinade and peanuts to wok. Stir-fry for 1 minute or until hot. Serve.
