Corn tortillas are very difficult to work with for a beginner. My taquitos kept cracking or ripping. Tried applying oil to soften them as others suggested and it was still a fail. Tasted good but presentation was awful haha

These were pretty good - for those that don’t work with corn tortillas much, briefly dip them in the oil before you try to fill and roll these. If you don’t, they just crack and turn into a mess. As they brown be aware that the filling is getting softer and will start to come out the ends (and remove them perpendicular from the pan so as not to “pour” them out). I had to “spider” my oil between batches to remove the filling that escaped which caused the oil to pop a lot.

Very good. Used flour tortillas instead of corn tortillas (didn’t have any) and cheddar cheese instead of Colby jack (also didn’t have any).
