- 1 Tbsp. olive oil
- 2 Merguez lamb sausage (links, or other spicy sausage)
- 4 bone-in, skin-on chicken thighs
- salt (freshly ground)
- freshly ground pepper
- 1 large onion (peeled and diced, approximately 1-1/2 C)
- 3 carrots (sliced into coins, approximately 1 C)
- 3 rib celery (sliced, approximately 1 C)
- 3 garlic cloves (peeled and smashed)
- 1 inch fresh ginger (knob, peeled and grated)
- 1 tsp. ground cinnamon
- 1/2 tsp. ground cumin
- 1/2 tsp. paprika (I used smoked paprika)
- 1 Orange (organic)
- 2 cups chicken stock (or water)
- 2 Tbsp. white wine (or water)
- 1/2 cup freshly squeezed orange juice
- 1/2 cup dried apricots
- 15 dates (pitted)
- 2 oranges (organic, peeled and sliced)
- fresh chopped cilantro (for garnish, optional)
- pine nuts (for garnish, optional, I didn't have any)
