- 1/2 cup diced tomatoes (canned, in juice)
- 1/2 cup cilantro stems (chopped fresh)
- 1 lemon (quartered, thinly sliced)
- 2 Tbsp. fresh lemon juice (or more)
- 4 chicken leg
- 1 piece drumsticks
- 2 chicken breast halves (with bones, skin removed, each cut crosswise into 2 pieces)
- 3 carrots (medium, peeled, cut into 2-inch pieces)

I forgot to pick up the mint, recipe was great without it. I also made it in a dutch oven and let it stew in the oven for a few hours, meat fell off th.e bones, great dtarting point.

This was delicious! I just used legs and thighs, no breast meat. I substituted frozen green beans and used baby carrots. I had the chick peas with the green beans and carrots leftover and ended up adding some chicken stock and some salt and pepper the next day and made it into a soup. It was really good. It was nice to get 2 different meals out of the same recipe. My kids requested this one again.
