Description
This is a flavourful stew, that is a favorite in my household, even the picky eaters love this dish, and any leftovers get quickly eaten. Add whatever herbs and spices to the stew you wish, I normally add in some thyme for some extra flavour. I also add in potatoes to make the dish more filling and also makes the dish taste amazing.
Ingredients

- 2.3 kilograms chicken breast (cut into chunks)
- 2 Tbsp. vegetable oil
- 700 mL chicken stock
- 700 mL water
- 4 garlic cloves (minced)
- 4 fresh thyme (springs)
- 70 grams butter
- 2 carrots (cut into chunks)
- 2 celery sticks (cut into chunks)
- 1 onion (large, chopped)
- 5 Tbsp. flour
- 1 tsp. salt
- pepper
- 1 dash Tabasco Sauce (or sprinkle in some cayenne pepper for some kick, optional)
- 2 potatoes (large Russett, chunks, optional)

Directions
- Put oil into a large, heavy based flameproof casserole, add the chicken chunks, cook on high heat, turning frequently, until chicken is browned all over. Pour in the stock and water, add the garlic and thyme and bring to boil.
- Reduce heat, cover and simmer for 30 minutes. Remove the pot from the heat and transfer chicken to a separate bowl to cool. Strain the cooking liquid into another bowl skimming off any fat that rises to the surface.
- Place the butter, carrot, celery, and onion into pot and cook over medium heat, stirring frequently for 5 minutes, or until onion is tender. Stir in the flour, whilst gradually whisking in the reserved cooking liquid, a ladleful at a time. Add the salt and some pepper, as well as some tabasco sauce or cayenne pepper (optional) . Reduce heat to low, cover and simmer for 30 minutes, until vegetables are tender.
- Stir in the chicken chunks, and potatoes (optional), into the cooked vegetables and cover, reducing heat to the lowest possible setting. Let cook for another 20-30 minutes, then serve
