- 16 oz. artichoke (quartered, drained)

- 1 pt. heavy whipping cream (2 cups)

Turned out well! I didn't want to hassle with the oven and a casserole dish so I did mine on the stove top in a large, deep skillet. Very easy to sauté the garlic with the butter, then adding the cream, cream cheese, herbs, salt, pepper, and parmesan. Tossed in the chicken and artichoke when all was smooth to heat, tossed in the cooked rotini, spinach, and mozzarella, topped with remaining mozzarella, then covered and let cook on low for about 10 minutes. It could have used a bit more salt and pepper up front, but overall was pretty good and very simple to make. Evaporated milk works quite well in place of the heavy whipping cream if you don't have cream on hand.
