Chicken Spinach Alfredo Pasta Bake

I created this recipe based on other recipes i've used made modifications based upon my personal tastes and preferences by adding ingredients like pesto, garlic and onions. This is what I would call the "basic" recipe so add more or less of items based upon your personal preferences. For example, if you're an onion lover, like my boyfriend, you may want to use more! Or if you do no like the flavor of much garlic, like my mother, use a little less. When it comes down to it, you are the one who will be enjoying this recipe. Cooking is love!
Ingredients
- 16 oz. pasta (your choice, penne, spiral, bow tie)
- 2 boneless skinless chicken breasts (thawed if frozen)
- 2 Tbsp. basil pesto
- 2 Tbsp. minced garlic
- 1/4 onion (chopped)
- 1 cup Alfredo sauce
- 16 oz. chopped frozen spinach (thawed)
- 1 egg
- 8 oz. ricotta cheese
- 1/2 cup Parmesan cheese
- pepper
- 2 Tbsp. olive oil (or oil of choice)
Directions
- Preheat oven to 350 degrees.
- Cook chicken. Cut boneless skinless chicken breasts into 1 inch cubes. Sprinkle chicken with salt and pepper to taste. Heat a skillet over medium heat and add 2tbsp of olive oil to the pan. Add chicken and onion to heated pan. Let the chicken brown and onions soften, flip chicken and stir every few minutes. Once chicken is almost cooked through (approx. 10 minutes) add minced garlic to pan and let it heat. Once chicken is cooked through (approx. 15 minutes) and onions and garlic are softened turn off heat and set aside.
- Cook noodles. Bring a quart of water to boil. Add noodles. Cook to al dente approx. 8-10 minutes. Drain noodles and set aside. Do not rinse.
