- 3 cups whole wheat pasta (al dente cooked, or use your favorite pasta)
- 2 smoked mozzarella (Sabatino’s, with Artichokes and Garlic Sausages, halved and sliced into 1/4″ thick slices, or use the sausage of your choice or leave it out)
- 1 Tbsp. olive oil
- 2 cloves garlic (minced)
- 1/2 roasted red pepper (diced)
- 5 Roma tomatoes (peeled and chopped into 1/2″ chunks)
- 1 cup prepared pasta sauce (I used Bertolli’s Tomato and Basil)
- 1 cup fresh spinach (roughly chopped)
- 2 oz. feta cheese (I used sheep’s milk feta)
- ground black pepper
- salt
- red pepper flakes (to taste)
- 1/2 lemon
