- 10 oz. whole wheat pasta
- 14 oz. sausage links
- 1/2 red bell pepper
- 1/2 red onion
- 1/2 green bell pepper
- 10 oz. cherry tomatoes
- 1 can black olives
- 8 oz. fresh mozzarella
- 2 oz. grated Parmesan
- 1 1/4 cups Italian dressing
- 1 Tbsp. olive oil

Directions
- Thinly slice the red onions, dice the bell peppers, cube the mozzarella and halve the tomatoes and black olives. Set aside
- Bring a pot of water to boil and cook pasta until al dente, according to the instructions on the box. Strain and set aside.
- Heat olive oil in a medium to large pan and cook sausage until cooked through, about 10 minutes. Turn occasionally so that all sides are browned. Let sausage cool enough to handle with bare hands and slice into rounds.
- In a large mixing bowl combine pasta, sausage, onions, bell peppers, mozzarella, tomatoes and black olives. Toss well. Add dressing and mix to combine. Sprinkle parmesan cheese over the salad to finish. Serve cold or at room temperature.
