- 1 pkg. italian chicken sausage (al fresco Sweet, sliced, or use two for even more protein)
- 1 onion (large, chopped)
- 5 garlic cloves (minced)
- 2 bay leaves
- 1/4 cup fresh parsley (chopped, more for garnish)
- 1/2 cup fresh basil (chopped, more for garnish)
- 1 Tbsp. dried oregano
- 1/4 tsp. pepper flakes (Crushed, more if you like a kick)
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 peppers (colored, chopped, I used red and yellow)
- 4 cups chicken stock (*see note)
- 24 oz. marinara sauce
- 8 oz. lasagna noodles (dried, about 8 noodles broken into 1-2 inch pieces, gluten free, whole wheat or regular noodles)
- 1/4 cup half and half
- 4 Tbsp. grated Parmesan cheese
- shredded mozzarella (for topping)
- 1/8 tsp. nutmeg (optional)
- 1 cup ricotta cheese
- 2 Tbsp. grated Parmesan cheese
- 2 Tbsp. fresh parsley (chopped)
- 2 Tbsp. fresh basil (chopped)
