- 3 Tbsp. coconut milk
- 1 Tbsp. fish sauce
- 1 Tbsp. sambal oelek (chili paste)
- 1/2 lime (large, juiced second half used in peanut sauce)
- 1/2 tsp. ginger (grated, skin removed)
- 1/4 tsp. black pepper
- 1/4 tsp. cayenne pepper (adjust heat to your preference of spice)
- 1/8 tsp. salt
- 1 cucumber (large, sliced thin garnish, optional)
