- 1/2 cup strawberries (washed, hulled and sliced)
- 1 tsp. mustard
- 2 Tbsp. wine vinegar (red-, balsamic is even better, but carb counts vary, so be careful)
- salt
- pepper
- sweetener (to taste, depends on sweetness of strawberries; you might not need it)
- 1/2 cup olive oil
- 8 cups lettuce (torn, spinach, and/or arugula, fill a 2-quart mixing bowl)
- 1/2 lb. boneless skinless chicken breast (sliced, that has been grilled or broiled)
- 2 cups strawberries (washed, hulled and sliced)
- 1/4 cup toasted almonds (sliced or slivered, toasted pine nuts or sunflower seeds are also good)
- 2 oz. feta cheese (crumbled, Parmesan also works well)
