This recipe is ok. I don't like the ramen noodles with this. I think rice vermicelli would be better. I think chicken stock would be fine as a substitute for the "broth" to cut down on the salt. I used low sodium soy sauce as well but it still seemed too salty to me as a whole. My son doesn't like spicy food so I didn't add the sriracha (as suggested by the recipe) and I think that was another mistake. I think adding the same amout of catsup would make a world of difference. Just a few modifications to try the next time I attempt this dish.

Great!! Peanut Butter was a little heavy- would recommend 4-5 unless you prefer peanut taste. Didn’t have scallions on hand- so went without- but very yummy!! Good recipe for ramen!!
