- 1 lb. boneless chicken breast (cut into chunks)
- 8 oz. white mushrooms (sliced)
- 1/2 onion (chopped)
- 2 Tbsp. olive oil
- 1 tsp. minced garlic
- 1 russet potato (medium, peeled and diced)
- 1 cup frozen peas and carrots
- 1 cup cut green beans (frozen)
- 2 tsp. curry powder
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
- 2 cups curry sauce (Master, see my recipe listed above or use bottled korma simmer sauce)
- 1 3/4 cups water
- 2 Tbsp. cashew butter
- 1/4 cup heavy cream
- 1 1/2 tsp. Garam Masala
- 1 Tbsp. chopped fresh cilantro
- 2 Tbsp. butter (soft)
- 6 puff pastry shells (or vol-au-vant, prepared according to package directions; can substitute toast points if necessary)
