- 1 onion (chopped)
- 1 red pepper (seeds removed, deveined and chopped)
- 1 green pepper (seeds removed, deveined and chopped)
- 1 Tbsp. chili powder

- 1 tsp. oregano
- 1/2 tsp. paprika
- 2 tsp. salt
- 4 cups low sodium chicken stock
- 14.5 oz. diced tomatoes (with onion and garlic, I use this kind from Muir Glen with juice)
- 3 Tbsp. tomato paste
- 15 oz. pumpkin puree
- 1 1/2 cups kidney beans (cooked, or 1, 15 ounce can, drained and rinsed)
- 1 1/2 cups pinto beans (cooked, or 1, 15 ounce can, drained and rinsed)
- 2 cups chicken (cooked cubed)
- 1/4 tsp. cayenne pepper (or to taste)
