- 1 large potato (diced)

- 4 rib celery (sliced)
- 1/2 cup sweet onion (chopped)
- 1/4 cup all purpose flour
- 15 oz. chicken broth
- 1/2 tsp. kosher salt (more to taste)
- 1/4 tsp. ground black pepper (more to taste)
- 1 tsp. fresh thyme (or 1/4 teaspoon dried)
- 1/2 cup half and half
- 2 cups shredded cooked chicken (cooked turkey will work too)
- 1/2 cup frozen peas
- 16 oz. biscuits (canned, I only use 6 of the biscuits)
