- 1 russet potato (large, peeled and cut in half, reserve 3/4 cup of the boiled potato water)

- 1 cup chicken (cooked & cubed, I used 1 medium chicken breast)
- 2 Tbsp. unsalted butter
- 3/4 cup yellow onion (finely chopped)
- 1/4 cup flour
- 1/2 tsp. black pepper
- 1/2 tsp. salt
- 1 1/2 cups chicken broth
- 1 1/2 cups peas (mixed, & carrots, thawed if frozen)
