Turned out really well, though I think I learned a few lessons for the next time. For example, I didn't soften the veggies enough during cooking them in the pan. I thought they'd soften in the oven but didn't, a bit crunchy. I also didn't cook the sauce long enough so it was a bit runnier than it should have been. However, it thickened up as leftovers. Finally, my family loved the topping so I'd double that next time, even though it would be adding calories. Overall, really good recipe that satisfies the comforting desire for pot pie yet is not as heavy, and is chock full of veggies.
