- 2 Tbsp. vegetable oil (divided)
- 1 1/2 lb. chicken breast (cut into 1-inch cubes)
- 1/4 cup lime juice (freshly squeezed)
- 2 Tbsp. fish sauce
- 2 Tbsp. soy sauce
- 2 Tbsp. creamy peanut butter
- 1 1/2 Tbsp. Sriracha
- 2 tsp. tamarind concentrate
- 1 tsp. granulated sugar
- 1 Tbsp. thai chiles (finely chopped, plus more for garnish, if you don't like spicy, you can use less or cut out altogether)
- 1 red bell pepper (thinly sliced)
- 1 cup shredded carrots
- 2 large garlic cloves (minced)
- 3 large eggs (lightly beaten)
- 1 cup bean sprouts
- 1/4 cup scallions (chopped, for garnish, optional)
- 1/4 cup peanuts (crushed, for garnish, optional)

Fantastic flavors and heat! I had to use spaghetti noodles. I also added sugar snap peas while sautéing the bell pepper for added color/texture.
This is a new favorite!!

overall it was very good. I think the amount of Tamarind concentrate is a little much. If you dislike it spicy, leave out the chilis and cut back on the Siracha. I made it exactly per the directions except for the peppers and Siracha (I am a wimp when it comes to spicy).

All around a good recipe. I found the 1/4 cup of lime juice to be too much.
Would add half the amount and use more on top if desired

This was very good. I added 1 cup of brocoli slaw and 1 more tbsp of sugar, but all in all yummy!!

It needed lemon grass, more veggies and more sauce. I also wish there was a better way to mix it bc the noodles tended to split

Great recipe! It was easy to follow and it turned out great! I couldn’t find the chiles and tamarind and it was still yummy! I highly recommend :)

This is a super easy, great tasting recipe but you’ll need to double or triple the sauce to coat the noodles properly

This is probably one of the best dinners i’ve ever made!! It all tasted amazing (i added extra honey to servings for people who don’t like spicy food)

Not a fan of fish sauce so I’ll skip it next time but otherwise it was super easy to make and very tasty!

It was delicious! Will make again. I used sambal oelek instead of sriracha as prefer the taste/heat from it. Added shrimp.

Really good! We didn’t have thai chilis, but we didn’t miss them. Making again next week!

A yummy dish! I cut the amount of ingredients in half as the dish was for 2. And the flavors were great! I will try to do a better presentation the next time. But taste-wise, will do the same thing. Thank you for this great recipe!
