- quinoa (cooked make a large batch, about 1 cup dry)
- carrots (large, peeled and 1-2 chopped for salads and the rest cut lengthwise for roasting)
- asparagus (chopped)
- zucchini (diced)
- onion (or shallots, diced into chunks or sliced)
- orange (or red, yellow, green bell pepper (or one of each), some diced and the rest cut into slices save some fresh for salads and wraps and use the rest for roasting)
- Roma plum tomatoes (diced)
- chopped cilantro
- blue cheese crumbles
- bacon crumbles
- avocados
- romaine lettuce (chopped)
- tortillas
- salsa
- 1/4 cup extra-virgin olive oil
- 2 Tbsp. lemon juice (or apple cider vinegar)
- 1/4 tsp. Himalayan salt (pink, add more to taste)
- black pepper (fresh)
- 4 Tbsp. olive oil (enough to coat)
- 1 tsp. Himalayan salt (pink)
- 1/2 tsp. garlic powder
- 1/4 tsp. black pepper (fresh)
