- 3 Tbsp. low sodium soy sauce
- 2 Tbsp. hoisin sauce
- 1 tsp. sesame oil
- 1 Tbsp. light brown sugar
- 1 Tbsp. rice wine vinegar
- 2 Tbsp. oil (divided)
- 1 lb. boneless skinless chicken thighs (cut into bite sized pieces)
- 2 cups mixed vegetables (I used a mix of broccoli, carrots and baby corn)
- 1 red bell pepper (small, diced)
- 3 cloves garlic (minced)
- 1 tsp. ginger (minced)
- sesame seeds (for garnish, if desired, optional)

This is sweeter than Lo mein I’ve had from restaurants but still great. I’ve made this multiple times now and love how quickly it comes together. Have used chicken thighs and breasts and both turned out great.

This is such an easy dish to make and the flavour is excellent. Great thing is that you can use up almost any type of veggies in your crisper and end up with a good and healthy result.

I like tripled the sauce (my family’s preference) and seasoned the chicken to my liking. Turned out really good and delicious!

This is really good! The sauce is a perfect amount for two people. If serving more than that then double the sauce.

Good recipe! We added mushrooms and cabbage, used sliced pork tossed with flour and doubled the sauce. It was a little on the sweet side...I will not double the brown sugar next time. It made a LOT! We’ll make this one again!

I was overzealous with the variety of veggies and the amount of noodles, thus had to double the sauce at the end. Delicious 😋
