- 1 lb. boneless skinless chicken breast (or boneless thigh meat, cut into small bite sized pieces)
- 1 large carrots (chopped)
- 1 inch ginger (knob, peeled & smashed)
- 1/4 tsp. ground cumin
- 1/4 tsp. chili powder
- 1 tsp. soy sauce (Use Tamari for gluten free)

- 1 bunch kale (ribs removed and leaves chopped)

Great start, added corn, potatoes, more spices. Once it was done added hot sauce to taste. Made it in the instant pot for 12 minutes. Everyone loved it!

Very quick and easy for a weeknight dinner. The ingredients can be modified or substituted according to what you have on hand and to suit your taste.

My family loved it, I didn't have soy sauce or ginger root so I used ground ginger and it turned out absolutely perfect and delicious . Very easy to make !
