Description
A recipe for chicken gizzards/mollejas de pollo for my husband. A mix of his mom's recipe and a Mexican recipe I found online.
Ingredients

- 1 lb. chicken gizzards
- 1 clove garlic (minced)
- 1 carrot (medium, shredded)
- 1 brown onion (medium, diced)
- 1/2 green bell pepper (chopped)
- 1 tomato (medium, diced)
- 1 cup chicken broth
- 1 tsp. cumin
- 1 bay leaf
- 1 pinch oregano
- salt
- 1/4 tsp. chili powder (or a teaspoon of chopped jalapenos, optional)
- olive oil

Directions
- Heat a dash of olive oil in a 12" skillet over medium heat and add onion, garlic, shredded carrots, and bell pepper. Cook for a few minutes to soften.
- Add the chicken gizzards and brown quickly.
- Add the diced tomato, cumin, bay leaf, salt, and pepper.
- Add chicken broth and simmer for 30-45 minutes until most of the liquid has evaporated, stirring occasionally.
- Remove bay leaf and serve hot over rice or with roasted potatoes.
