- 2 chicken breasts (large, diced into 2-inch cubes)
- 2 tsp. vegetable oil
- 1/2 onion (large, diced)
- 3 cloves garlic (minced)
- 1 1/2 cups frozen mixed vegetables, thawed
- 3 large eggs
- 3 cups cooked white rice (preferably a day or two old, but it's ok if it's fresh; I also used sushi rice, but you can use whatever rice you prefer)
- 2/3 cup low sodium soy sauce (OR ⅔ cup Soy Vay Teriyaki Marinade)

It had too much soy sauce for my liking. I added a lot more rice to compensate. Not my favorite, but my family did enjoy it.

I changed it a bit. I added half the soy sauce before to the chicken for marinade. Also, I only made one egg because I am not a fan. I think it went rather well . I like less salty food, so one third of sauce over everything tasted perfect to me!
